Does applying a filter degrade the original image quality?

The resolution stays the same, but a filter recalculates pixel values, so the result is not identical to the source. Pushing contrast hard is the clearest example: highlights blow out to pure white and shadows collapse to black, and that information cannot be brought back. If you plan to stack several looks, do all the adjusting in one session and export once at the end rather than saving and reopening between steps.

Why do my black-and-white conversions look flat and gray?

Removing color collapses elements that were separated by hue into grays of similar brightness. A red apple against green leaves reads as strongly contrasting in color yet turns into nearly the same tone in monochrome. After converting, raise the contrast a little and adjust brightness if needed, so the distance between the lightest and darkest areas opens back up.
